Tarka/Tadka/Torka dal and roomali rooti is the Bengali's favourite dinner - cooked at roadside, eaten at home. My recipe is a simple take on the popular dish and does not need any special store bought masala. For the egg tarka just like the dhabas, I don't fry the eggs separately, instead the eggs are whisked in and cooked briefly to give the egg tarka a creamy texture—the eggs get cooked in the residual heat leading to silky strands of egg. Its a high protein recipe and can be used a soup as well.
